What Did You Have for Lunch Today?
I got this recipe from my sister, Kim, who got it from Trader Joe's. YUM YUM!!! I am normally munchy by the afternoon...and today I am not. It was so satisfying! It has protein, veggies, carbs, and crunch.
Brown Rice Salad (the measurements I used b/c I wanted extra for later in the week.
Cook 1 cup of brown rice (2 cups)
Cool and toss lightly with olive oil and rice vinegar
Add 1 can drained garbanzo beans (2 cans)
1 cup toasted pecans
4-6 green onions (6-7)
3-4 mini sweet bell peppers, chopped (7 - whole pkg.)
(2-3 breasts of chicken, cooked w/salt and pepper and chopped)
Add all ingredients to rice. Mix. Refrigerate.
